Brand history
SPAGO was founded in Sydney in 2011 by chef Eddie Leung, with its first restaurant opening in Beverly Hills. Handmade fresh pasta was central to the original concept, combining Italian pasta-making traditions with Eddie's own culinary influences.
The brand expanded to Chatswood in 2018 with a café-style pasta bar, followed by Darling Square in 2020. Its development has brought together restaurant dining, pasta-bar and express formats, alongside a create-your-own pasta concept that lets customers personalise their meal.
